The name comes from "udekoki," a word often used in Saitama prefecture that means "to use one's skills," and the restaurant serves dishes made with fresh local vegetables, Bushu Wagyu beef, and SAIBOKU pork.
We are particular about making everything by hand to bring out the natural flavor of the ingredients, and we have a wide variety of menus using seasonal ingredients such as Fukaya green onions and Kawagoe sweet potatoes, which are Saitama specialties. Please enjoy the ingredients grown in Saitama to your heart's content.
